Crockpot Paleo Chicken Curry Recipe

I am a mom and a business woman. I need to save time in the kitchen. I have two kids under the age of 8. I am sure you understand how busy life can be for me and I am sure busy for you too. Over the years the crockpot has become my best friend.

I also realized grains were not my best friend about 10 years ago, when I was battling candida and a host of other digestive issues, adrenal fatigue and allergies (food and environmental) and started looking for meals without grains. Funny thing is now these meals are called “paleo”. I just knew back then – grains bloated me up and made me me fuzzy in my thinking. So if you are feeling fuzzy, then try this recipe and if you are time deprived, then this crockpot paleo recipe is really for you. All you have to do is go to the market, chop and add to the crackpot and leave it alone – then enjoy. If you do not like spice, the  amend and omit the curry and just add some ginger powder and rosemary twigs.

Crockpot Paleo Chicken Curry Recipe

Active time: 10 minutes Total time: 4 hours   Serves 4

1 to 1.5 pounds of boneless chicken thighs (chopped)

1 can of coconut milk

3 tbsp curry paste (red or yellow)

1 small yellow onion (chopped)

1 medium red bell pepper (diced)

1 medium green bell pepper (diced)

1/2 head of cabbage.(chopped into ribbons)

Toss everything into the crockpot and cook on low for 4+ hours. Enjoy!
