How to Make Roasted Pumpkin | Rachel Feldman, Health Coach

pumpkin roasted RWAs Fall approaches, your body naturally craves foods that are in season.

This is just a preview of what your body will be craving. You can use this same recipe for butternut squash or any roasted vegetables.

Roasting Vegetables is a simple way to COOK ONCE and eat three times – you can cook all in one tray & consume delicious foods as roasting beings out the sweetness of the vegetable.

ingredients:
1 small pumpkin or 1/4 large pumpkin
1 tablespoon olive oil
sea salt

directions:
Heat oven to 400F. Scoop out the seeds and insides of the pumpkin. It is best to cut the slices of pumpkin to make roasting easy. Place pumpkin slices on baking sheet or tray. Rub with olive oil on both side. Roast for 20-25 minutes, depending on thickness of pumpkin slices.
