The Best Dessert for a Memorial Day Party aka Protein Balls

How many times do you go to a party and you cannot eat anything [especially dessert] because there is:

  • Gluten
  • Dairy
  • Eggs
  • or some other ingredient you just don’t do well with…

I have been there too so I just bring a dish.

Some great ideas for snacks are:

  • Fruit Skewers
  • Hummus and Veggies
  • Guacamole and Veggies
  • Fruit Platter
  • Lentil Dip
  • Flax Crakers and Pesto Dip

Here are some great dessert ideas:

  • Fruit Platter with Mint
  • Gluten Free Cookies
  • Gluten Free Corn Muffins

Or bring some protein balls for dessert.

Here is my recipe:

CHOCOLATE INSANITY BALLS

MAKES 10 BALLS 

1 cup of almonds

1 cup of pitted dates, soaked for 15 minutes or more

2 tablespoons of raw cacao powder

1 teaspoon vanilla extract

1 teaspoon cinnamon powder

1 teaspoon of water

COMBINE YOUR INGREDIENTS. Combine all ingredients in a high-speed blender. You may need a little more water depending on the consistency of the dough. Add 1 teaspoon of water more if needed.

SHAPE.Roll the dough into balls and place on a tray. Put the tray in the refrigerator to set for one hour.
