Healthy Paleo Protein Pancakes

I need simple in my life when it comes to eating. I have found simple and healthy is an easy diet. I love making these pancakes for my little ones because I can make them and then put them right into the fridge to re-heat.

If you are like me and gluten or grains are not your friend, then this is the pancake for you. This pancake has all that good fat, packed with protein and they taste awesome.

I love to add berries for the kids or sprinkle with raw cacao or you can add allergy friendly mini chocolate chips.

Once you have this recipe, you can experiment with adding all different types of healthy foods such as hemp seeds, chia seeds, goji berries or extra flax seeds.

HEALTHY PALEO PROTEIN PANCAKES

1 scoop vanilla protein powder or your favorite protein powder

1⁄4 cup egg whites

1/2 banana, mashed

1 teaspoon cinnamon

1 tablespoon flax seed meal

Mix all the ingredients together in a bowl. Pour about 1⁄4 cup of batter into a pan that has been sprayed with olive oil cooking spray and heat on medium. Cook one side until you see the little bubbles, just like cooking any pancake. Flip over carefully, and cook on the other side until the middle is done. Peek inside with a fork to check the middle.

BLUEBERRY PANCAKES: Add a handful of fresh or frozen blueberries after the above ingredients are mixed together.

OPTIONAL: Top with two sliced strawberries or frozen blueberries and powdered stevia. Enjoy your protein pancakes! If you need more carbohydrates, you may add 1 tablespoon raw honey or maple syrup for extra sweetness.

I struggled for the longest time trying to figure out what diet was right for me – macrobiotic, raw, vegan, paleo and have realized this : once I let go of the grains, supported my body with more protein and consumed probiotic rich foods daily, I felt great.

It took me tears of experimenting in the kitchen to find recipes that worked for my body. I was so sick and tired of feeling bloated, exhausted and sick that I began to eliminate foods and tap into what really fuels my body.
