I cannot tell you how much I love popsicles. I am just one of those girls. I also love ice cream but when dairy and I stopped being friends, it was not a good thing because I love that creamy taste. I knew I needed to find a way to satisfy my sweet tooth and the craving I had for that cold creamy yumminess.

When I stopped eating dairy, I realized I was just craving fats. I switched out the dairy for avocado and it was a marriage made in heaven. I did not stop there. I knew I needed to start experimenting because the store bought coconut milk ice cream just was not doing it for me.

Also, suffering with digestive issues for the longest times left me with a boat load of inflammation, candida and liver toxicity. I started learning how to make foods that were easy to digest and good for my body. I looked for foods that would decrease inflammation and hydrate my body naturally.

This rockin’ healthy ice cream & yes, you can make these into popsicles as well is good for you and tastes amazing.

I have made for friends, family and my own kiddos and they love it. My clients have made this recipe as well and it is a home run. By adding the peppermint essential oils to this amazing mixture, you naturally enhance digestion – pretty cool right?

Mint Chocolate Chip Ice Cream
 Pops

2 ripe avocados

1/2 cup almond milk (or non-dairy milk of choice)

3 tablespoons raw honey

2 tablespoons coconut oil

2 drops peppermint oil

2 ounces dark chocolate, chopped or shaved

To make ice cream: Throw all ingredients, except the chocolate, into a high powered blender and blend until smooth and creamy. Stop and scrape down the blender container, as necessary. Put the mixture into a container in the freezer for at least 2 hours.

To make popsicles: After blending until smooth, then pour into your favorite popsicle mold and freeze for at least 2-3 hours.
