Blueberry Chia Seed Pudding – Low Sugar And Paleo Friendly!


 

If you are looking for an awesome breakfast, that is easy to make and wicked healthy, then you want to make this Chia Seed Breakfast Pudding.  Chia seeds are a powerhouse seeds. They are packed with potassium, antioxidants, omegas and protein.

You can add chia seeds to any smoothie, drink or soup and they are known for getting gelatinous, because they absorb a lot of liquid. If you are making a chia pudding, the rule of thumb is – 3 tablespoons to 1 cup of water or dairy free milk.

I have found it helpful to grind the chia seeds or soak them the night before as this ensures better assimilation for myself or anyone with digestive distress. You can make this recipe with berries, banana, or any natural sweetener or sweeten with stevia and cinnamon if you have yeast overgrowth or blood sugar imbalances.

The awesome thing about chia seed pudding is the combinations are endless – you can use a dairy free milk, coconut water, water or juice as your base for your pudding.

Blueberry Chia Seed Pudding 

{serves 1 person}

3 tablespoons Chia Seeds

1 cup Dairy Free milk

1 teaspoon Stevia (optional)

Top with almond slivers and handful of berries

ASSEMBLE THE NIGHT BEFORE. The night before you want the pudding for breakfast, mix chia seeds, and dairy-free milk in a container with a lid, shake well and let it sit overnight in the refrigerator.

THE NEXT MORNING. The next morning eat pudding cold and top with berries and almonds. Add sweetener of choice if desired.

Enjoy this awesome breakfast. If you want to add a boost of protein, mix in your favorite plant based protein powder like pea protein, sun warrior or hemp protein.
